
Sweet Potato Chili
A deliciously sweet and savory vegetable based chili that's perfect when you're craving comfort food that isn't too heavy.
Equipment
- Crock pot
- Cutting Board
- Chef Knife
- heat resistant spoon
- pot w/ lid
Ingredients
- 2 each Sweet Potato medium dice
- 1/2 each Onion diced
- 2 each Carrot peeled and diced
- 1 clove Garlic minced
- 1 can Diced Tomatoes
- 1 tbsp Tomato Paste
- 4-6 oz Salsa
- 1 each Bay Leaf
- 1 tsp Cumin ground
- 1 tsp Chili Powder
- 1/4 tsp Poultry Seasoning
- 1/4 tsp Corriander ground
- 1/2 can Beans your choice
- 1/2 cup Rice long grain
- Salt as needed
- Pepper as needed
Instructions
- Set the crock pot to high
- Add in all the ingredients except the rice. Mix together and cover, cook until vegetables are tender. (About 2-3 hours)
- Cook rice for the chili
- Adjust seasoning and turn the crock pot off
- Serve with rice and your choice of toppings and enjoy!
