
Shrimp and Veggie Scampi with Linguini
This recipe is perfect for those that love indulgent flavors without being over-complicated. Succulent shrimp, crisp snow peas and tender broccoli are tossed with linguini pasta in a white wine and butter sauce infused with garlic. A squeeze of lemon juice brings a balance to the richness of the butter, making for an indulgent meal for any dinner party, date night or special occasion.

- 1 Large Saucepan
- 1 Strainer
Ingredients
- 2 lbs Raw Shrimp peeled and deveined
- 2 oz Garlic minced
- 1 oz Onion small dice
- 16 oz Linguini
- 8 oz Snow Peas trimmed and cut in half
- 8 oz Broccoli trimed into bite sized pieces
- 1 stick Unsalted Butter
- 2 oz White Wine
- 1 each Lemon juiced
- 1 oz Olive Oil
- Salt to taste
- Pepper to taste
- Parsley, chopped optional garnish
Instructions
- Bring a large pot of salted water to a rolling boil. Cook the linguini according to its packaging, specifically al dente. Drain and set aside pasta, tossing it in a drizzle of olive oil to keep it from sticking together.
- In the skillet, heat the olive oil and half the stick of butter over meadium-high heat. Add the minced garlic and diced onion and saute until fragrant and softened.
- Add the shrimp to the skillet. Season lightly with salt and pepper and cook until they start to turn pink and opaque.
- Toss in the snow peas and broccoli with the shrimp to combine, making sure to saute until they start to become tender.
- Pour in the white wine, allowing it to simmer and reduce by at least half.
- Add the linguini and toss with the vegetables to combine. Add the second half of the butter and the lemon juice.
- Adjust seasoning to preference and garnish with chopped parsley if desired.
Notes
