This recipe is perfect for those that love indulgent flavors without being over-complicated. Succulent shrimp, crisp snow peas and tender broccoli are tossed with linguini pasta in a white wine and butter sauce infused with garlic. A squeeze of lemon juice brings a balance to the richness of the butter, making for an indulgent meal for any dinner party, date night or special occasion.
Bring a large pot of salted water to a rolling boil. Cook the linguini according to its packaging, specifically al dente. Drain and set aside pasta, tossing it in a drizzle of olive oil to keep it from sticking together.
In the skillet, heat the olive oil and half the stick of butter over meadium-high heat. Add the minced garlic and diced onion and saute until fragrant and softened.
Add the shrimp to the skillet. Season lightly with salt and pepper and cook until they start to turn pink and opaque.
Toss in the snow peas and broccoli with the shrimp to combine, making sure to saute until they start to become tender.
Pour in the white wine, allowing it to simmer and reduce by at least half.
Add the linguini and toss with the vegetables to combine. Add the second half of the butter and the lemon juice.
Adjust seasoning to preference and garnish with chopped parsley if desired.
