Why We Started Two Chef Mission
After years of working in professional kitchens, we found ourselves wanting something different.
We were seeing more shortcuts, more compromises, and more pressure to fit food into systems that prioritized cost and consistency over the people actually eating it. Ingredients were often chosen because they were cheaper. Creativity was limited. Menus were designed for the masses rather than individual.
While we know that in huge kitchens structure is what makes a system last and thrive, it all just began to weigh more heavily on us. We were seeing how different families were. Many needed allergy accommodations. Some had multiple dietary needs and there was only so much that could be done.
We knew that we wanted to create something different. Where we could thrive creatively and focus more individually on clients and what they actually needed.
We started Two Chef Mission to create a more personal approach to food. One built around people instead of just a preset system. The goal was customized meals, intentionality with ingredients, and never being a one size fits all company.
Over the years that mission has grown beyond simply cooking meals. Now, we help families, vacation goers, and clients with unique dietary needs enjoy customized meals without any of the added work cooking brings.
For us, great food matters. Creativity is key and quality ingredients will always outweigh cutting corners. Every menu we create starts with understanding who we are serving and building experiences around them.

Melissa Badeaux-Shepherd
Chef, Owner
Melissa holds a bachelor’s degree in culinary management and has over 17 years of culinary experience. As co-owner of Two Chef Mission, she oversees much of the planning, customization, and client experience that happens behind the scenes.
From menu development and dietary accommodations to content creation and business operations, Melissa is passionate about creating systems that help meals fit real life. She believes the customization plays such a large role in every service Two Chef Mission provides.
As a parent of four and someone who understands the realities of busy schedules, changing needs, and family logistics, she enjoys helping clients find meal solutions that feel supportive, practical and personalized.
When she isn’t working on Two Chef Mission, you’ll find her pursuing another creative project, spending time with family, or finding new ways to bring ideas to life.
Tony Badeaux-Shepherd
Chef, Owner
Tony has almost 20 years of culinary experience and has spent his career working in professional kitchen throughout the Orlando area. As co-owner of Two Chef Mission, he is often the one bringing menus to life, whether that’s preparing weekly meals for families, creating private dining experiences, or supporting vacation groups and retreats.
Tony enjoys the challenge of turning ideas into memorable experiences and takes pride in creating meals that feel both approachable and customized to the people being served. His hands on approach, attention to detail, and ability to adapt to different client needs help make every service feel personal.
As a father of four, he understands firsthand how important it is for meals to fit into real life and support the people gathering around the table.
When he’s not cooking, Tony enjoys grilling, gaming, and spending time with family. His love of great food and creating experiences continues to shape the way he approaches every client and event.
