Heat a large saute an on medium. Add in 1 Tbs oil and then the chicken, season with salt and pepper and cook minutes. Add in onion and carrots.
Add in the garlic, peas and pork. MIx in a bit of soy sauce. As it heats start add in the the rice and stir together. Taste and adjust seasoning and add in soy sauce if needed. Heat through and then fold in the scrambled egg.
Serve and enjoy!
