Ingredients

  • 1 each Chicken Breast
  • 1/4 tsp Dry Basil
  • 1/4 tsp Dry Oregano
  • 8 ounces Pasta
  • 1 each Tomato dice
  • 1 ounce Olives slice or chop
  • 1/2 each Bell Pepper dice
  • 1 ounce Feta crumbled
  • 2 oz Red Wine Vinegar
  • 1 clove Garlic chop
  • 1 tsp Honey
  • 1 tsp Dijon Mustard
  • 1/2 tsp Dry Thyme
  • 3 ounces Olive Oil
  • As Needed Kosher Salt
  • As Needed Black Pepper

Instructions

  • Preheat the oven to 375 F.
  • Toss the chicken with oil, salt, pepper, basil and oregano.
  • Set up on a sheet tray and bake in the oven until it is an internal temperature of 165 F, about 20-30 minutes.
  • Let rest and then slice it for the pasta.
  • Bring a pot of water to a boil and stir in the pasta.
  • Cook until aldente, about 7 minutes, drain and toss together with a bit of oil to keep it from sticking.
  • For the vinaigrette blend the garlic, dijon, red wine vinegar, oil, honey, salt and pepper. Adjust seasoning as needed.
  • Toss the pasta with the veggies, olives, feta, chicken and the vinaigrette.
  • Serve & Enjoy!

Notes

The vinaigrette can be made ahead of time and if there is leftover or if you up the amount made it can be used in any salad as a great dressing.
