
Cucumber and Tomato Salad
A light and refreshing side salad that goes perfectly with any dish or as a small snack.
Equipment
- Cutting Board
- Chef Knife
- 2 Mixing bowls
- Whisk
Ingredients
- 1/2 each Cucumbers diced
- 1 each Roma Tomato diced
- 1/4 each Onion diced
- 1 clove Garlic minced
- 1/2 Tbsp Dijon Mustard
- 1.5 oz Red Wine Vinegar
- 1 Tbsp Basil chiffonade
- 2 oz Olive Oil
- Salt as needed
- Pepper as needed
- 2 oz Purple Cabbage shredded
Instructions
- Toss the cucumber, tomato, cabbage, basil and onion together in the first bowl.
- Whisk together the garlic, dijon, vinegar and olive oil in a separate bowl. Adjust seasoning as needed.
- Toss all the ingredients together and let marinate for 7-15 minutes.
- Serve and enjoy!
