Delicious Beef Koftes: A Flavorful Mediterranean Feast

With Tabbouleh, Mixed Vegetables and Yogurt-Mint Sauce

While working with our weekly meal delivery clients, we have been selecting recipes from around the world to expand not only our culinary knowledge, but also our clients range of meals. It has been a lot of fun to try out different ad new recipes to enjoy. We recently made beef koftes and truly loved how they turned out. We wanted to share the recipe with you and hope you enjoy it as much as we did.

Beef Koftes: serves 4

1 lb Ground Beef

1 Egg

1/4 cup Bread Crumbs

1/4 cup Parsley (chopped)

1 tsp Cumin

2 cloves Garlic (minced)

1/4 Yellow Onion (diced)

1/2 Lemon (Juice and Zest)

1/2 tsp Kosher Salt

1/4 tsp Black Pepper

1 pack Naan Bread

Instructions:

  1. Mix all ingredients into the beef and makes sure they mix evenly.
  2. Form beef into even slightly flattened balls.
  3. Heat a grill pan on high heat, brush with some oil.
  4. Sear balls on each side, about 3-5 minutes.
  5. Finish in a 350 F oven if necessary.
  6. Naan bread can be warmed or served at room temperature.

Tabbouleh: serves 4

1 cup Bulgur Wheat

1 cup Water (boiling)

1 Lemon (Juice)

1 oz Olive Oil

2 Roma Tomatoes (diced)

1/4 Yellow Onion (diced)

2 Tbs Scallions (chopped)

1/4 cup Parsley (chopped)

To Taste Kosher Salt and Black Pepper

Instructions:

  1. Bring water to a boil and pour over the bulgur wheat.
  2. Let sit for 30 minutes.
  3. Fluff the bulgur wheat to break apart.
  4. Toss together with the rest of the ingredients and adjust seasoning.

Mixed Vegetables: serves 4

1/2 Zucchini (medium cut)

1/2 Yellow Squash (medium cut)

1/4 Onion (medium dice)

2 cloves Garlic (chopped)

To Taste Kosher Salt and Pepper

1-2 oz Olive Oil

1 Roma Tomato (medium cut)

Instructions:

  1. Preheat the oven to 350 F
  2. Toss everything but the tomato together on a sheet tray.
  3. Bake in the oven for about 5-7 minutes.
  4. Add in the tomatoes and toss to together.
  5. Cook another 5-7 minutes or until veggies are tender.

Yogurt-Mint Sauce: serves 4

1/2 cup Plain Greek Yogurt

2 cloves Garlic

6-10 Mint Leaves

1 oz Olive Oil

1 oz Lemon Juice

To Taste Kosher Salt and Black Pepper

Instructions:

  1. Blend all ingredients together with an immersion blender, bullet blender or blender.
  2. Taste for seasoning and adjust if necessary
