Ingredients

  • 1 each Chicken Breast
  • 1 each Romaine chopped
  • 1/4 each Red Onion julienne
  • 1 each Tomato chopped
  • 1/4 each Cucumber chopped
  • 2 oz Feta
  • 2 oz Red Wine Vinegar
  • 3 oz Olive Oil
  • 1/2 Tbsp Oregano chopped
  • 1 Tbsp Thyme chopped
  • 1/2 Tbsp Dijon Mustard
  • 1/2 Tbsp Honey
  • 1 clove Garlic minced
  • Salt as needed
  • Pepper as needed

Instructions

  • Preheat the oven to 350 F. Season the chicken with a bit of the thyme and oregano, salt and pepper. Bake in the oven for 30-40 minutes or until an internal temperature of 165 F.
  • For the vinaigrette blend together the vinegar, oil, oregano, thyme, dijon, honey, garlic, salt and pepper.
  • Toss salad greens together with the cucumber, tomato, and red onion.
  • Slice chicken and serve on top of the salad. Dress salad and top with feta.
  • Enjoy!
