Steak with Herb Polenta and Mixed Vegetables

  • Tongs
  • Heat resistant spatula/spoon
  • Whisk

Ingredients
 
 

  • 10 oz Steak
  • 1/2 tbsp Onion Powder
  • 1/2 tbsp Garlic Powder
  • 1/2 tbsp Paprika
  • 1/2 each Zucchini quartered, sliced
  • 1/2 each Yellow Squash quartered, sliced
  • 1/4 each Onion diced
  • 1/2 cup Polenta
  • 1/2 cup Milk your choice
  • 1.5 cup Water
  • 1/2 tbsp Rosemary chopped
  • 1/2 tbsp Thyme chopped
  • 1 oz Goat Cheese
  • Salt as needed
  • Pepper as needed
  • Olive Oil as needed

Instructions
 

  • Bing a pot with the milk, water, salt, pepper, rosemary and thyme to a boil. Whisk in polenta and let cook on medium low, about 5 mins. Polenta should thicken. Stir polenta and add in the goat cheese. Adjust seasoning and pull off heat
  • Rub steak with onion powder, garlic powder, paprika, salt, and pepper. Heat a pan and sear steak on each side 3 minutes. Cook to your preferred doneness.
  • Heat a saute pan, add in 1 Tbs olive oil, and toss in onion. Cook 3 minutes and then add in zucchini and squash. Season with salt and pepper. Cook 3-4 minutes, veggies should be tender. remove from heat.
  • Serve and enjoy!
