Sweet Potato Chili

Ingredients
  

  • 2 each Sweet Potato medium dice
  • 1/2 each Onion diced
  • 2 each Carrot peeled and diced
  • 1 clove Garlic minced
  • 1 can Diced Tomatoes
  • 1 tbsp Tomato Paste
  • 4-6 oz Salsa
  • 1 each Bay Leaf
  • 1 tsp Cumin ground
  • 1 tsp Chili Powder
  • 1/4 tsp Poultry Seasoning
  • 1/4 tsp Corriander ground
  • 1/2 can Beans your choice
  • 1/2 cup Rice long grain
  • Salt as needed
  • Pepper as needed

Instructions
 

  • Set the crock pot to high
  • Add in all the ingredients except the rice. Mix together and cover, cook until vegetables are tender. (About 2-3 hours)
  • Cook rice for the chili
  • Adjust seasoning and turn the crock pot off
  • Serve with rice and your choice of toppings and enjoy!
