Cheesy Spinach Tomato Pasta

Ingredients
 
 

  • 1/2 box Ziti Pasta
  • 1/2 pint Cherry Tomatoes halved
  • 1/2 bag Spinach
  • 1 oz Flour
  • 1 oz Butter
  • 1 cup Milk
  • 4 oz Monterey Jack Cheese
  • 4 oz Goat Cheese
  • Olive Oil as needed
  • Salt as needed
  • Pepper as needed

Instructions
 

  • Bring a pot of water to a boil. Stir in the pasta and cook to aldente. Drain and toss with a bit of oil so it doesn’t stick together
  • Heat a sauce pan and add in the butter. Once melted whisk in the flour and make a roux. Whisk in the milk and bring to a simmer. A sauce like consistency should start to occur. Start stirring in the cheese and goat cheese. Season sauce, toss in the pasta and veggies, and adjust the seasoning if needed.
  • Serve & Enjoy!

Notes

If goat cheese is not your preference you could use cream cheese.
