Greek Salad with Chicken
Classic mediterranean ingredients combined with hearty chicken; an absolute must in any kitchen arsenal of recipes.

- 2 Mixing bowls
- Thermometer
- Tongs
- Whisk
Ingredients
- 1 each Chicken Breast
- 1 each Romaine chopped
- 1/4 each Red Onion julienne
- 1 each Tomato chopped
- 1/4 each Cucumber chopped
- 2 oz Feta
- 2 oz Red Wine Vinegar
- 3 oz Olive Oil
- 1/2 Tbsp Oregano chopped
- 1 Tbsp Thyme chopped
- 1/2 Tbsp Dijon Mustard
- 1/2 Tbsp Honey
- 1 clove Garlic minced
- Salt as needed
- Pepper as needed
Instructions
- Preheat the oven to 350 F. Season the chicken with a bit of the thyme and oregano, salt and pepper. Bake in the oven for 30-40 minutes or until an internal temperature of 165 F.
- For the vinaigrette blend together the vinegar, oil, oregano, thyme, dijon, honey, garlic, salt and pepper.
- Toss salad greens together with the cucumber, tomato, and red onion.
- Slice chicken and serve on top of the salad. Dress salad and top with feta.
