BBQ Chicken with Baked Potatoes and Veggies
Just because you don't have a grill or grill pan in your kitchen, that doesn't mean that you can't have delicious BBQ chicken on those hot summer nights.
Equipment
- Cutting Board
- Chef Knife
- Aluminum Foil
- 2 Sheet Trays
- Saute Pan
- Mixing bowl
- Tongs
- Thermometer
- Heat resistant spoon/spatula
Ingredients
- 1 each Chicken Breast halved
- BBQ Sauce as needed
- 2 each Potatoes
- 1 each Yellow Squash sliced
- 1/2 each Onion julienne
- 1/2 each Bell Pepper sliced
- Cheese optional
- Sour Cream optional
- Chives optional
- Bacon optional
- Butter optional
- 1 Tbsp Olive Oil
- Salt as needed
- Pepper as needed
Instructions
- Preheat the oven to 375 F. Wash, prick skin with a fork and Wrap the potatoes with foil and bake until tender. About 30 minutes.
- Toss chicken with salt, pepper and BBQ sauce. Heat a saute pan and sear the chicken on each side. Finish on a sheet pan in the oven to cook until an internal temp of 165 F.
- Heat a saute pan and add in 1 Tbs oil. Add in the onion and bell pepper. Cook 3 minutes, season.
- Add in the squash and toss together. Cook until tender and then pull off the heat. Adjust seasoning.
- Get any of the toppings for the potatoes ready . Slice the potatoes and top with toppings of your choice.
- Serve and Enjoy!
