This is perfect for those hot summer nights when a heavy, rich meal just doesn't sound appealing. Perfectly spiced black beans and savory veggies and rice make this a completely nutritious meal without weighing you down.

  • Cutting Board

  • Saute Pan
  • Heat resistant spoon/spatula


  • 1 can Black Beans
  • 1/4 each Onion diced
  • 1 clove Garlic minced
  • 1/4 each Zucchini diced
  • 1/4 each Yellow Squash diced
  • 1/2 each Bell Pepper diced
  • 1/2 cup Riced cooked
  • 1 Tbsp Paprika
  • 1 Tbsp Chili Powder
  • 1/2 Tbsp Coriander
  • 1/2 Tbsp Cumin
  • 1 Tbsp Thyme
  • Olive Oil as needed
  • Salt as needed
  • Pepper as needed


  • Cook rice
  • Heat a large saute pan on medium. Add in 1 Tbs oil and then the diced vegetables and garlic. Season and cook 4 minutes.
  • Stir in the beans with the liquid from the can, don't drain it (use a bit of water to get everything out of the can). Season with cumin, chili powder, coriander, paprika, and thyme.
  • Bring to a simmer and cook 7-10 minutes. Adjust seasoning.
  • Serve over rice and Enjoy!
