with Veggies and Rice

Spiced Black Beans with Veggies and Rice
This is perfect for those hot summer nights when a heavy, rich meal just doesn't sound appealing. Perfectly spiced black beans and savory veggies and rice make this a completely nutritious meal without weighing you down.
Equipment
- Cutting Board
- Chef Knife
- pot w/ lid
- Saute Pan
- Heat resistant spoon/spatula
Ingredients
- 1 can Black Beans
- 1/4 each Onion diced
- 1 clove Garlic minced
- 1/4 each Zucchini diced
- 1/4 each Yellow Squash diced
- 1/2 each Bell Pepper diced
- 1/2 cup Riced cooked
- 1 Tbsp Paprika
- 1 Tbsp Chili Powder
- 1/2 Tbsp Coriander
- 1/2 Tbsp Cumin
- 1 Tbsp Thyme
- Olive Oil as needed
- Salt as needed
- Pepper as needed
Instructions
- Cook rice
- Heat a large saute pan on medium. Add in 1 Tbs oil and then the diced vegetables and garlic. Season and cook 4 minutes.
- Stir in the beans with the liquid from the can, don't drain it (use a bit of water to get everything out of the can). Season with cumin, chili powder, coriander, paprika, and thyme.
- Bring to a simmer and cook 7-10 minutes. Adjust seasoning.
- Serve over rice and Enjoy!
