Ingredients
 
 

  • 1/2 box Rigatoni Pasta
  • 10 oz Ground Beef
  • 1/4 each Onion diced
  • 1 each Carrot peeled, diced
  • 1 Stalk Celery diced
  • 1/2 each Squash diced
  • 1 Tbsp Tomato Paste
  • 6 oz Diced Tomatoes
  • 1 Tbsp Rosemary chopped
  • 1/2 Tbsp Paprika
  • Olive Oil as needed
  • Salt as needed
  • Pepper as needed

Instructions
 

  • Bring a pot of water to a boil. Stir in the pasta and cook to al dente. Drain and toss with a bit of oil so it doesn’t stick together.
  • Heat a sauce pan and add in the ground beef. Season with salt, pepper, paprika, and rosemary and break up the meat as it browns. Add in the onion, celery, and carrot. Cook 2-3 minutes. Add in the squash and tomato paste. Cook 2 minutes. Stir in the diced tomatoes, bring to a simmer, and cook 12 minutes. Adjust seasoning and toss with the pasta.
