
Potato Leek Soup
Our yummy potato leek soup recipe is perfect comfort food for those chilly fall nights.
Equipment
- Cutting Board
- Chef Knife
- Pot
- Heat resistant spoon/spatula
- Blender
Ingredients
- 12-16 oz Stock
- 2 each Potatoes chop
- 1 each Leek the white portion, washed and chopped
- 1/4 each Onion diced
- 1 clove Garlic minced
- 1/2 Tbsp Sage chopped
- 1 Tbsp Thyme chopped
- 1 Tbsp Butter
- Salt as needed
- Pepper as needed
- Cheese optional
- Additional Herbs optional
Instructions
- Heat a pot and add in butter. Once melted add in the onion and leeks. Season and cook 3 minutes.
- Add in the garlic, sage and thyme and cook 2 more minutes. Add in the potatoes and mix together.
- Stir in the stock and bring to a simmer. Cook 20-30 minutes until the potatoes are tender. Blend together with a blender (use caution if using a stand blender and don't overfill)
- Adjust seasoning and serve with cheese and chopped herbs if wanted
- Enjoy!
