Equipment

  • 1 Cutting Board
  • 1 Sauce Pot
  • 1 Chef Knife
  • 1 Immersion Blender or Stand Blender
  • 1 Heat resistant spoon/spatula

Ingredients
  

  • 1 ounces Olive Oil
  • 1/2 each Onion
  • 4 cloves Garlic
  • 1 each Mango chopped
  • 3 Tbsp Tomato Paste
  • 4 ounces Tomato Sauce
  • 2 ounces Balsamic Vinegar
  • 6-8 ounces Water
  • 2 ounces Brown Sugar
  • Kosher Salt As Needed
  • Black Pepper As Needed

Instructions
 

  • Heat a saucepan to high. Add in the olive oil.
  • Once hot, add in the onion, garlic, and mango. Season and cook 3-5 minutes with the heat lowered to medium.
  • Add in the Tomato Paste and stir together. Cook 2-3minutes.
  • Add in the tomato sauce, water, red wine vinegar, and brown sugar. Stir to combine, bring to a simmer and cook about 45 minutes-1 hour.
  • The sauce should reduce some. Using an immersion blender or blender, puree the BBQ sauce. (If using a blender, cover the top with a towel and be aware that the heat will put the contents under pressure)
  • Adjust seasoning and set aside for the ribs. (This can also be done the day ahead and cooled)
