Lemon Thyme Chicken Soup
The Lemon in this soup brings a refreshing take on a traditional chicken soup. Light, flavorful and delicious.
Equipment
- Cutting Board
- Chef Knife
- Pot
- Heat resistant spoon/spatula
Ingredients
- 1 each Chicken Breast diced
- 2 Tbsp Thyme
- 1/2 each Onion diced
- 2 each Carrot peeled, diced
- 2 stalks Celery diced
- 1 each Lemon zested, juiced
- 12-16 oz Stock
- Olive Oil as needed
- Salt as needed
- Pepper as needed
- Parmesan Cheese optional
Instructions
- Heat a pot and add in a little oil. Sear the chicken, season.
- Add in the onions, carrots, celery and thyme. Cook 3-4 minutes.
- Add in the lemon zest, lemon juice and stock. Bring to a boil and reduce to a simmer and cook 20 minutes.
- Adjust seasoning and serve with chopped thyme, a hit of lemon juice and some parmesan on top.
- Serve & Enjoy!
