  • Cutting Board

  • Heat resistant spoon/spatula


  • 1 each Chicken Breast diced
  • 2 Tbsp Thyme
  • 1/2 each Onion diced
  • 2 each Carrot peeled, diced
  • 2 stalks Celery diced
  • 1 each Lemon zested, juiced
  • 12-16 oz Stock
  • Olive Oil as needed
  • Salt as needed
  • Pepper as needed
  • Parmesan Cheese optional


  • Heat a pot and add in a little oil. Sear the chicken, season.
  • Add in the onions, carrots, celery and thyme. Cook 3-4 minutes.
  • Add in the lemon zest, lemon juice and stock. Bring to a boil and reduce to a simmer and cook 20 minutes.
  • Adjust seasoning and serve with chopped thyme, a hit of lemon juice and some parmesan on top.
  • Serve & Enjoy!
