Garlic Herb Steak with Mashed Potatoes and Roasted Vegetables

Equipment
- 1 Pot for potatoes
- 1 Saute Pan for the steaks
- 1 Sheet Tray for the vegetables
- 1 Cutting Board
- 1 Plate for seasoning raw steaks
- 1 Potato Masher
- 1 Set Tongs
Ingredients
- 4 each Steaks your choice such as ribeye, sirloin, or filet mignon
- 4 cloves Garlic minced
- 1 Tbsp Rosemary fresh, chopped
- 2 Tbsp Parsley fresh, chopped
- 1 Tbsp Thyme fresh, chopped
- 2 Tbsp Olive Oil for steaks
- 4 each Potatoes large, wash, and quarter
- 4 Tbsp Butter
- 1/2 cup Milk
- 1 each Zucchini halved and sliced to 1/2 inch pieces
- 1 each Bell Pepper cut into 1/2 inch pieces
- 1 each Yellow Onion medium-large dice
- 2 Tbsp Olive Oil for veggies
- 1 clove Garlic mince
- 1 tsp Thyme fresh, chopped
- Kosher Salt To Taste
- Black Pepper To Taste
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the minced garlic, fresh parsley, rosemary, thyme, olive oil, salt, and black pepper in a bowl. Mix well and rub all over the steaks. Make sure they are well coated. Set aside to marinate while you prepare the other components.
- Fill a pot of water to cook the potatoes. Add in the quartered potatoes and bring to a boil. Reduce to a simmer and cook until they are fork tender. Drain the potatoes and return them to the pot.
- Mash the cooked potatoes with a potato masher or fork. Add butter, milk, salt, and black pepper. Continue mashing until the potatoes are smooth and creamy. Adjust the consistency by adding more milk if needed. Cover to keep warm.
- Toss the mixed vegetables with olive oil, garlic powder, dried thyme, salt, and black pepper. Spread them out in a single layer on a baking sheet. Roast in the preheated oven for about 15 minutes or until the vegetables are tender and slightly caramelized. Stir them halfway through cooking for even browning.
- Heat a sauté pan over medium-high heat. Add the marinated steaks to the hot pan and cook for about 4-6 minutes per side, depending on the desired doneness. Adjust the cooking time to your preference and the thickness of the steaks. Remove the steaks from the pan and let them rest for a few minutes before serving.
- Serve the Garlic Herb Steak alongside the creamy mashed potatoes and roasted vegetables.
