While we know summer starts late June, now is the time for getting recipes developed and worked up so that you have them at your fingertips when your summer planning arrives. While we were selecting some new recipes to test out, we knew we wanted to try out some quinoa bowls. They are perfect for an easy summer lunch, picnic or BBQ.
Our top 2 that we made were the Southwest with delicious roasted peppers, onions and corn and the Greek with crisp cucumber, tomato, onion and feta. We hope you are as excited for some fun summer cooking as we are and that you give one or both of these bowls a try.
The Recipes
These recipes were both a fun spin on their more traditional salads and it was fun to add a protein packed recipe while also still having all the nutrients of the produce. An added bonus, they are both super easy to make, so there’s no worry of a time-consuming meal on a weeknight.
