These meals are super simple and meant to utilize some already prepared foods in the store, because let’s face it sometimes life gets pretty hectic. For information about the menu check out the video below.
Chicken with Yellow Rice and Veggies:
Cook the yellow rice. Saute the veggies with some garlic, salt and pepper. Serve with the chicken breast from the rotisserie chicken.
Dice the chicken breast up and toss with the salad greens. Add the toppings that you choose like the dry cranberries and pecans pictured. Toss together with your favorite salad dressing and enjoy.
Chicken and Veggie Pesto Pasta:
Cook your pasta. Use the chicken leg or thigh meat, chop it up. Saute or steam the veggies and season them. Toss the pasta with the veggies, chicken and some pesto.
Use the chicken leg or thigh meat, chop it up. Add in some of your favorite veggies. Saute them, season them and add in the stock. Let the flavors come together for 10-15 minutes and then enjoy some chicken soup.
